A Dinner to Impress Your Guests

Whether you are looking for a recipe for your family dinner tonight, or want an easy dish that presents beautifully to guests, Chicken Dijon with Snap Peas will be an excellent choice.

Thinly slicked chicken breast, are sautéed quickly, served in a light sauce with fresh sugar snap peas and a tasty blend of mashed cauliflower and potatoes. It tastes wonderful.

The recipe is easy. The chicken cooks quickly. And you end up with a dish pretty enough to impress guests at your next dinner party. But at our house, it’s simple a favorite family supper.

It’s also a lightened up dish. The chicken used is boneless and skinless breast. The fresh sugar snap peas add color as well as flavor. I love using cauliflower in a variety of dishes to increase the nutrients and to cut calories. Here it is mashed, half cauliflower and half potatoes, to give you the rich taste and aroma of mashed potatoes, yet less carbs and calories. You don’t even taste the cauliflower, so try it on those who say they don’t like it. Of course, you can use all cauliflower if you prefer to skip the potatoes, or use three quarters to one quarter of each. I prefer to keep the potato taste in it for this dish.

Each chicken breast is butterfly filleted into thin slices. You can cut the slices into medallions too, if you like, to provide more, smaller pieces. The chicken needs only a few minutes to cook, to give you tender bites of deliciousness. It’s so fast, that I suggest you have everything ready to go. Once the chicken is done you will want to serve as quickly as possible.
