Berry Frozen Yogurt Bites

Looking for a healthy frozen treat instead of ice cream?  Here is a recipe that has so many good-for-you ingredients you can eat it every day!  It makes a flavorful, sweet, satisfying dessert or snack any time of day.

Check out these healthy ingredients:

  • Coconut oil—good for so many things, including brain health
  • Berries—one of the top 10 foods for brain and body health
  • Nuts—another top brain food, and a healthy fat
  • Greek Yogurt—Great probiotic and source of protein, with no saturated fat or cholesterol
  • Honey—High in anti-oxidants, great for digestive health, blocks free radicals

Use only organic unrefined, pure coconut oil and raw unrefined honey for the most benefits.  Each of the ingredients offers much more in the way of nutrition and health benefits.

Instead of Ice Cream…

Many of us love a bowl of ice cream after dinner.  How many of us try to resist because of fat and calorie content?  Others may find they are unable to eat it because they are lactose intolerant.  This tasty treat using Greek yogurt may solve all of those problems.  Many who are lactose intolerant are able to include yogurt in their diet.  Plus Greek yogurt is so rich and filling, you might find you eat far less.  The sweetness comes from the berries and the honey, making it a naturally sweet dish.  If you prefer it sweeter use 2 tablespoons of honey.

Use your favorite berries.  Strawberries would be wonderful, blackberries too.  Combine several if you want. I added some frozen blueberries I had right before pouring it into the pan.  I didn’t blend them so there would be whole bites in there too.  If you prefer, reserve a quarter of the berries you have for blending.  Simply stir them in at the end.  That way you will have the flavor blended in, and bites of whole or sliced berries.

When it is frozen, it slides out of the pan for slicing on a flat surface. I suggest you dip your knife in hot water to make a smoother cut.

I ran several pieces through my Ninja blender again after it was frozen to see if it would look like ice cream.  It comes out very grainy until you add a few tablespoons of milk.  Add one or two at a time, then blend until smooth and creamy.  You can see it the photo below that both ways work!  It tastes great, icy cold, berry flavored and healthy.

Serves: 6 to 8

Ingredients
  • ½ large container of plain Greek yogurt (I used Fage)
  • 1 cup raspberries
  • 2 tablespoons coconut oil
  • 1 - 2 tablespoon raw honey
  • 1 teaspoon vanilla
  • ¼ to ½ cup nuts, chopped
  • ¼ cup additional berries (I used blueberries)
Instructions
  1. In a small dish or pan melt coconut oil.
  2. Blend with raw honey and vanilla.
  3. Scoop yogurt into your blender.
  4. Add in the oil, honey and vanilla and mix well, scraping the sides if needed.
  5. Add in the raspberries and blend briefly until mixed in.
  6. Toss in nuts and the blueberries and just stir to mix.
  7. Pour into a small pan (I used an 8x10 baking pan).
  8. Smooth into pan and freeze.
  9. Once frozen, cut into pieces and serve.

Here is my favorite kitchen appliance—the one I used to make this dessert.  Never before have I had a blender that works well on everything I try!  That includes crushing ice, making smoothies and slushes, blending frozen butter with flour, and grinding coffee beans.  I love it.  You can see photos and read my review here.  I keep adding photographs when it accomplishes anything new and exciting.

A perfect cookbook if you are trying to eat more Greek yogurt.  It’s easy to substitute it for some regular ingredients like sour cream, but this cookbook will give you so many wonderful ideas.
