  • ⅓ cup olive oil
  • ⅓ cup red wine vinegar
  • 1 teaspoon salt
  • 1 tablespoon parsley, chopped
  • 1 clove garlic, finely minced
  • 1 pound small mushrooms, with short stems
  • 1 can black olives, medium, pitted
  • 1 pinch oregano
  • pepper, to taste
Instructions
  1. Thoroughly wash mushrooms.
  2. Combine oil, vinegar, garlic, salt and parsley in pan and bring to a boil.
  3. Add mushrooms, simmering 6 to 9 minutes.
  4. Add olives and remove from heat.
  5. Let cool, then refrigerate in the marinade.
