Combine cream cheese and milk, mixing until smooth and well blended.
Spread half the cream cheese mixture on the bottom of the pie crust.
Cover that with fresh strawberries. If berries are large you may want to halve them. Use about 1 cup of the strawberries, leaving the rest for the glaze.
Cut the remaining berries in half.
Combine the sugar and cornstarch in a sauce pan. Add the water then mix until blended.
Add the remaining strawberries then cook over medium heat until thickened, stirring often.
Add red food coloring, mix well.
Pour immediately over the strawberries in the pastry shell.
Spoon dollops of remaining cream cheese onto top of pie, then chill until set.
