Bourbon Chicken

Serves: 4 servings
  • 1 pound chicken thigh meat cut into bite size pieces
  • ½ cup soy sauce
  • ½ cup brown sugar
  • ½ teaspoon minced or finely chopped garlic
  • 1 teaspoon powdered ginger
  • 2 tablespoons finely chopped onion
  • ½ cup bourbon whiskey
  • 2 tbs white wine (set aside for last minute)
  1. Mix all the marinade ingredients and pour over chicken pieces in a ziplock bag.
  2. Cover and refrigerate mixing often for several hours (best overnight).
  3. Bake chicken at 350 for one hour in a single layer.
  4. Baste every 10 minutes.
  5. Remove chicken.
  6. Scrape pan juices with all the brown bits into a frying pan.
  7. Heat and blend in the white wine.
  8. Add chicken cook for 1 to 2 minutes.
  9. Serve hot with rice, or as an appetizer..
