Sour Cream Cranberry Bars

Ingredients
  • 1 cup butter, softened
  • 1 cup packed brown sugar
  • 2 cups quick-cooking oats
  • 1 -1/2 cups flour + two tbsp of flower
  • 2 cups dried cranberries
  • 1 cup (8 ounces) sour cream
  • ¾ cup sugar
  • 1 egg, lightly beaten
  • 1 tbsp grated lemon peel
  • 1 tsp vanilla extract
Instructions
  1. Preheat oven to 350.
  2. In a large bowl, cream butter and brown sugar until light and fluffy.
  3. Combine oats and 1-1/2 cups flour; add to the creamed mixture until blended.
  4. Set aside 1-1/2 cups for topping.
  5. Press remaining crumb mixture into an ungreased 13x9-inch baking pan.
  6. Bake 10-12 minutes or until lightly browned.
  7. In a large bowl, combine the cranberries, sour cream, sugar, egg, lemon peel, vanilla and the 2 tbsp of flour.
  8. Spread evenly over crust.
  9. Sprinkle with reserved crumb mixture.
  10. Bake 20-25 minutes or until lightly browned.
  11. Cool on a wire rack.
