Mediterranean Tuna Salad

- 2 teaspoons dijon mustard
- 1 lemon juiced and zested
- 2 tablespoons Olive Oil
- 1 cup cherry tomatoes halved
- ½ cucumber chopped into slices or cubes (your choice)
- ½ red pepper chopped
- 2 – 4 radishes chopped
- 2 tablespoons olives chopped
- 1 19oz can of chick peas drained and rinsed
- 1 can of tuna drained (again your choice of flaked or solid)
- Mix the first three ingredients into a bowl and then after whisking to meld all the flavors together, add the vegetables and toss to coat.
- Let sit at room temperature to let the vegetables marinade and then serve on a bed of salad greens.
