Swedish Flat Bread

Ingredients
  • 7 cups flour
  • ½ cup cornmeal
  • 2 Tbsp salt
  • 2 tsp baking soda
  • 1 tsp baking powder
  • ¾ cup shortening
  • 1½ cups buttermilk powder
  • 4 cups water
Instructions
  1. Warm over at 350 while mixing ingredients.
  2. Mix dry ingredients together first then add shortening. Next add buttermilk powder and gradually add water; mix until you have a stiff dough.
  3. Shape dough into small balls and roll on a floured board with a textured rolling pin making very thin rounds.
  4. Roll dough up onto a thin small paddle to be rolled out flat on cookie sheet in oven on top rack.
  5. After about 3-5 minutes; use 2 oven paddles to change dough from top rack to second rack to finish baking for another 3 minutes or less. You may need to adjust the minutes for top and bottom flat breads. You don't want the bottom to get too brown; just a very light color.
  6. When bottom is done take out with oven paddles. Put flat bread on a hard plastic sheet on a table or counter top.
  7. Cut into cracker like squares or pieces.
  8. Let cool. Then top with butter or favorite jam and enjoy!
