Mix dry ingredients together first then add shortening. Next add buttermilk powder and gradually add water; mix until you have a stiff dough.
Shape dough into small balls and roll on a floured board with a textured rolling pin making very thin rounds.
Roll dough up onto a thin small paddle to be rolled out flat on cookie sheet in oven on top rack.
After about 3-5 minutes; use 2 oven paddles to change dough from top rack to second rack to finish baking for another 3 minutes or less. You may need to adjust the minutes for top and bottom flat breads. You don't want the bottom to get too brown; just a very light color.
When bottom is done take out with oven paddles. Put flat bread on a hard plastic sheet on a table or counter top.
Cut into cracker like squares or pieces.
Let cool. Then top with butter or favorite jam and enjoy!
