The Healthy Brain Salad

Serves: 3 to 4
Ingredients
  • 1 package Spinach
  • 1 package Lettuce
  • 2 Tomatoes, sliced or chopped
  • 1 Avocado, chopped
  • ½ Onion, chopped
  • ½ cup Walnuts, chopped or halved
  • ¼ cup Sunflower Seeds
  • 1 to 1/1/2 cups Blueberries
  • 1 cup Beets, canned or cooked, sliced or chopped
  • ½ cup Garbanzo Beans
  • Salad Dressing, recipe below
Instructions
  1. Tear lettuce if not prepackaged.
  2. Slice or chop the vegetables.
  3. Assemble in a large salad bowl, or in individual bowls
  4. Toss with Cider Vinegar dressing (recipe below) or with you preference.
