Spinach and White Bean Soup

Ingredients
  • 1 tablespoon olive oil
  • 2 cloves garlic, finely chopped
  • 4 leeks or green onions, chopped
  • 2 cans fat free chicken broth
  • 1 cup water
  • 3 cups cooked white beans (or 2 cans)
  • 2 bay leaves
  • 2 teaspoons cumin
  • 2 to 3 cups spinach
  • salt and pepper
  • fresh Romano or Parmesan, grated
  • ½ cup orzo (optional)
Instructions
  1. Heat olive oil in a large skillet, then saute the garlic and onion for 3 to 4 minutes.
  2. Reduce heat to simmer.
  3. Add chicken broth, cumin, bay leaves, stirring to blend.
  4. Add beans and orzo (optional), then simmer for 5 minutes.
  5. Salt and pepper to taste.
  6. Prepare bowls for serving.
  7. ot 3 minutes before serving, add the spinach.
  8. Once the spinach has wilted, serve with a sprinkling of Romano or Parmesan cheese.
