Cauliflower Crust Slices

Ingredients
  • 1 head cauliflower
  • 1 egg, slightly beaten
  • 1 cup shredded light Mozzarella cheese
  • ¼ to ½ cup freshly grated Parmesan or Romano
  • 1 teaspoon Herbes de Provence
  • ½ teaspoon garlic salt
Instructions
  1. Rinse and dry cauliflower, then cut it into pieces.
  2. Run the cauliflower through the food processor so that it is rice-sized.
  3. Using a large saucepan, bring an inch of water to a boil.
  4. Add the cauliflower, and cook covered 4 minutes.
  5. Preheat the oven to 425 degrees.
  6. Line a baking sheet with parchment paper.
  7. Drain the cauliflower through a strainer, getting out as much liquid as possible.
  8. Let cool a few minutes, then put the cauliflower in a clean dish towel and squeeze to remove the liquid.
  9. Next, in a large bowl, combine the cauliflower with ½ cup mozzarella, 1 egg slightly beaten, 1 teaspoon dried oregano, 1 teaspoon dried basil, and ½ teaspoon garlic salt.
  10. Stir the mixture well.
  11. Scoop the cauliflower mixture onto the pan.
  12. Form it into a 8½ x 11 inch rectangle, flattened to about ¼ inch thick.
  13. Place in the oven for 30 minutes, or even longer until the crust is golden brown and firm.
  14. Remove from the oven and sprinkle with the remaining mozzarella and the parmesan cheese.
  15. Bake another 7-10 minutes, or until the cheese is melted.
  16. Cut into servings.
  17. Serve with your favorite pasta sauce or dressing.
