Spinach Sandwich
  • 1 teaspoon olive oil
  • 1 clove garlic, finely chopped
  • 1 bag (10 ounces) spinach
  • ½ red onion, sliced
  • 4 rolls
  • 8 slices of Provolone cheese
  1. Slice rolls in half, placing a slice of cheese on the bottom and one on the top of the roll.
  2. Saute garlic in olive oil for 3 minutes.
  3. Add Spinach, stirring occasionally, until it is all wilted.
  4. Remove spinach to a plate or bowl lined with paper towels to absorb some of the moisture.
  5. Divide onto the 4 rolls.
  6. Heat in microwave or in a 350 degree oven long enough to melt the cheese.
  7. Serve immediately
