  • 2 tablespoons butter
  • 4 cups sliced peeled apples
  • 1½ cups raisins
  • ¼ cup light brown sugar
  • ½ to 1 teaspoon cinnamon
  • 4 eggs
  • 1 cup milk
  • 1 cup flour
  • 1 tablespoon granulated sugar
  • 1 tablespoon grated lemon on orange peel
  • Pinch salt
  • Lemon wedges
  • Maple syrup
  1. Preheat oven to 425 degrees.
  2. Melt the butter in a large ovenproof skillet over a medium heat.
  3. Add apples,raisins, brown sugar and cinnamon.
  4. Cook covered, stirring from time to time until the apples are tender - about ten minutes.
  5. Remove the mixture from the pan an set aside
  6. Wipe the skillet clean and grease.
  7. In a blender blend the eggs and milk on high speed Add the flour,granulated sugar, peel and salt.
  8. Blend until smooth and pour into the skillet.
  9. Spoon the apple/raisin mixture evenly over the top.
  10. Bake for about twenty minutes until puffy and golden brown.
  11. Serve warm with the lemon wedges and the maple syrup
