Spinach Pesto

Serves: 3 - 4
- 4 cups fresh, cleaned spinach
- ¼ to ⅓ cup cashews
- 1 teaspoon apple cider vinegar, raw and unrefined
- 1 tablespoon coconut oil
- 2 basil leaves (more or less as preferred)
- salt and pepper to taste
- Soften the coconut oil.
- Combine all ingredients in a food processor (I used the Ninja Blender).
- Pulse until spinach chopped.
- You may need to stir away from sides one time then pulse once more.
- Serve over hot pasta.
- Warm in sauce pan or in microwave if you wish.
