Spinach Pesto

Ingredients
  • 4 cups fresh, cleaned spinach
  • ¼ to ⅓ cup cashews
  • 1 teaspoon apple cider vinegar, raw and unrefined
  • 1 tablespoon coconut oil
  • 2 basil leaves (more or less as preferred)
  • salt and pepper to taste
Instructions
  1. Soften the coconut oil.
  2. Combine all ingredients in a food processor (I used the Ninja Blender).
  3. Pulse until spinach chopped.
  4. You may need to stir away from sides one time then pulse once more.
  5. Serve over hot pasta.
  6. Warm in sauce pan or in microwave if you wish.
