Garlic Shrimp and Spinach Sautéed in Coconut Oil

Serves: 3 to 4
Ingredients
  • 1 to 2 tablespoons virgin, unrefined organic coconut oil
  • OR 2 - 3 tablespoons butter
  • 1 clove garlic, finely diced
  • 1 teaspoon Old Bay seasoning (optional)
  • ¼ cup chopped red onion or 2 green onion, chopped
  • 3 to 4 cups spinach
  • 1 pound shrimp
  • Pasta (optional)
Instructions
  1. Have shrimp peeled and de-vein shrimp before beginning.
  2. Heat coconut oil or butter in large skillet.
  3. Stir in Old Bay seasoning and diced garlic.
  4. Add cleaned, shelled shrimp and saute 2 to 3 minutes on one side.
  5. Turn shrimp over and saute 2 more minutes.
  6. Add chopped onion for last 1 to 2 minutes.
  7. If you are adding pasta, stir it in before the spinach.
  8. Add spinach and toss in for just a minute or two until it starts to wilt.
  9. Serve immediately.
