Pear and blue cheese pizza

  • 1 pack pizza dough
  • 1 leek, cleaned, trimmed and sliced
  • 1 pear, peeled and cored
  • 2 oz hard cheese, grated
  • 1½ oz blue cheese, crumbled
  • 1½ oz goat cheese, crumbled
  • Salad leaves
  • Olive oil
  1. Preheat the oven to 400 degrees.
  2. Heat the oil in a pan and saute the leek slices on a low-medium heat for five minutes.
  3. Cut half the pear into cubes and the other half into slices. Add the cubes to the leeks and cook for a further two minutes.
  4. Turn the heat to low and cover the pan.
  5. Prepare the pizza dough on a cookie sheet and bake for 5 - 8 minutes. It should not be fully cooked.
  6. Remove the base from the oven and sprinkle with the hard, grated cheese.
  7. Add the leek/pear mixture, spreading it evenly over the base.
  8. Add the remaining cheeses.
  9. Bake for a further 5 - 8 minutes.
  10. Remove from the oven and immediately add the pear slices.
  11. Allow the pizza to cool slightly, add the salad leaves on top of the pear slices and serve at once.
