Watercress, pecan and blue cheese salad

Serves: 2 - 4 portions
  • 3 cups watercress, washed and trimmed
  • 1 tablespoon fresh lemon juice
  • 1½ tablespoons olive oil
  • ½ cup toasted pecans
  • ½ cup crumbled blue cheese
  1. Put the watercress in a large bowl with the nuts and the cheese.
  2. Mix gently so that the ingredients are well distributed.
  3. Mix together the lemon juice and oil.
  4. Toss the dressing into the watercress salad just before serving.
