Awesome Potato Pancakes!

Serves: 2 - 4 portions
  • 6 to 8 potatoes (depending on size)
  • 3 eggs
  • 1 cup of all purpose flour
  • ¾ lb. of cheese (cheddar or Colby)
  • salt and pepper
  • sour cream for topping
  1. Clean and grate potatoes. I use a box grater.
  2. In the bowl with the grated potatoes, add flour and eggs, salt and pepper
  3. Mix with a large spoon until all ingredients are combined.
  4. Grate cheese and set aside.
  5. Into a hot frying pan with two teaspoons of olive oil, drop potato batter until the bottom of the pan is covered. Do not make the layer too thick.
  6. Cook until one side is golden brown. and turn over to cook the other side.
  7. Continue until all potato batter mix is used up.
  8. Keep these warm in the oven until ready to serve. When serving, let your family decide if they will have cheese and sour cream on top.
