Cauliflower and Bean Burritos

Serves: 4
- 1 tablespoon olive oil (or cooking spray)
- 1 clove garlic, chopped finely
- ½ onion, chopped
- 2 tablespoons fresh, chopped cilantro
- 2 cups cauliflower, chopped finely or riced
- 2 cups refried beans (or 1 can)
- 1 cup grated cheese (cheddar or Mexican blend)
- 1 cup salsa
- ½ cup sliced olives (optional)
- 1 to 2 sliced green onion (optional)
- Heat oil in skillet.
- Saute garlic and onions for 3 or 4 minutes until onion is becoming opaque.
- Add chopped cauliflower, and sauté another 1 to 2 minutes.
- Add the refried beans and the fresh chopped cilantro, blending together while stirring until thoroughly heated.
- Divide onto 6 tortillas.
- Sprinkle with a portion of grated cheese.
- Sprinkle each with one tablespoon of salsa.
- Roll into a burrito.
- Top with remaining cheese and sliced olives and/or green onion. Sprinkle with additional salsa or reserve it to serve with the meal.
- Warm in microwave until cheese is melted (or in oven at 350 degrees for 5 to 10 minutes.
