Cauliflower and Bean Burritos

Ingredients
  • 1 tablespoon olive oil (or cooking spray)
  • 1 clove garlic, chopped finely
  • ½ onion, chopped
  • 2 tablespoons fresh, chopped cilantro
  • 2 cups cauliflower, chopped finely or riced
  • 2 cups refried beans (or 1 can)
  • 1 cup grated cheese (cheddar or Mexican blend)
  • 1 cup salsa
  • ½ cup sliced olives (optional)
  • 1 to 2 sliced green onion (optional)
Instructions
  1. Heat oil in skillet.
  2. Saute garlic and onions for 3 or 4 minutes until onion is becoming opaque.
  3. Add chopped cauliflower, and sauté another 1 to 2 minutes.
  4. Add the refried beans and the fresh chopped cilantro, blending together while stirring until thoroughly heated.
  5. Divide onto 6 tortillas.
  6. Sprinkle with a portion of grated cheese.
  7. Sprinkle each with one tablespoon of salsa.
  8. Roll into a burrito.
  9. Top with remaining cheese and sliced olives and/or green onion. Sprinkle with additional salsa or reserve it to serve with the meal.
  10. Warm in microwave until cheese is melted (or in oven at 350 degrees for 5 to 10 minutes.
