Rhubarb Cobbler

Serves: 12 portions
- 6 cups rhubarb
- 2½ cups white sugar
- 1½ cups flour
- ¼ tsp salt
- 1½ tsp baking powder
- 3 eggs beaten
- ¾ cup melted margarine
- Put the rhubarb in the bottom of a 9 x 13 inch pan.
- Sprinkle 1 cup sugar over the rhubarb.
- In a medium mixing bowl, mix together flour, 1½ cups sugar, salt and baking powder.
- Beat 3 eggs in a small bowl. Melt the margarine. Add both of these to the dry ingredients.
- Mix well. Spread over rhubarb.
- Bake at 350 for 45 minutes to an hour.
- Check the topping with a toothpick to make sure it is done and not gooey
