Fettuccine Gorgonzola

If you are looking for a distinctive dish featuring fettuccine, but don’t want the standard Alfredo sauce, you will be impressed with this recipe. Fresh gorgonzola cheese, is mixed with mascarpone for a rich delicious sauce. It is perfect over spinach or tricolor fettuccine.

It’s special enough to serve your discerning guests yet easy enough to prepare for a family dinner. It goes together very fast considering how good and rich it tastes.

I first tried it with two girlfriends on one of our annual road trips. Rather than eating out all the time, we had fun cooking in a night or two. Especially delightful with a glass of red wine to sip.

The only change I would make to the recipe would be to add more broccoli. It tastes lovely in the sauce and the more vegetables the better to me. I would add at least one more cup, or more if you like.

Of course, there were plenty of servings of vegetables in the salad we served with the pasta dish. With leafy greens, onion, kalamato olives, even garbanzo beans, it was delicious. Naturally we made our own homemade dressing of oil, vinegar, and fresh herbs to flavor the salad.

It is always more fun to cook with friends and with wine. Still, it’s a recipe easily made all by yourself if needed. Hot, rich, and satisfying. Hard to beat that.
