The Soup Is On.

When the temperatures begins to drop in the fall that means it’s time to get out the soup recipes. Use your favorite stock pot or get out the crock pot and create some warming delicious soups.

There is nothing like a hot bowl of hearty soup to warm you up on those cold winter days. A nice bowl of soup could be a starter for a great meal, or it could be the great meal itself. Here are three soups that we like to make through out the cold weather season.

This is a chicken based soup made with small seasoned meatballs, of course chicken, and let’s add some tortellini.

Serve this as a starter for any meal or just with a side salad.

Here is another chicken based soup, also with seasoned meatballs, chicken and escarole. Some people use spinach, and we’ve made with spinach before, but I really prefer the escarole, also you can add orzo to this hearty soup.

This soup is a family favorite around the Holidays, and this recipe is right from my grandmother’s kitchen.

The term Wedding Soup comes form the Italian phrase “minestra maritata” meaning (“married soup”),” this is a reference to the fact that green vegetables and meats go well together.

Now here we have a beef based broth, with fresh onions, and a little bit of red wine added.

This soup is cooked until the flavors of the broth and onions are melded together.

Top with fresh baguette and melted cheese.
