Healthy Snacks: Vegetarian Spinach Balls

Instead of chips or sweets after school, why not have a dish of these ready for your children after school. Little bites of goodness, ready to dip in spicy mustard, as pictured here, or perhaps with ranch dip or salsa.

Kids enjoy bite sized snacks, much more than they might like spinach on its own. I love to sneak in more vegetables in snacks like this. They won’t even taste the vegetables. Serve with toothpicks and your children will feel like they are having a party of their own.

Speaking of parties, Spinach Balls make great appetizers for your next get-together too. Make them even smaller for tiny bites. These do include cheese, so if you don’t eat dairy as a vegetarian, you will want to substitute other ingredients. I would add cauliflower rice and additional seasonings. Kalamato olives chopped up would give it a great flavor.

Sometimes I will use less of the parmesan or Romano and add some cheddar or feta cheese for flavor.

A plus for snack time or party time is how well these freeze. Freeze flat on a plate. Once frozen, you can store them in a ziplock bag and pull them out as you need them, whether two or three or a hundred. Reheat them in the oven at 350 degrees, pull them out and serve.
