Easy Breakfast Sandwiches to Make at Home.
Breakfast can be boring. I know oatmeal is one of the best things you can eat for breakfast, and I really like it, but some days I need a change. Yesterday was one of those days. Looking around for something to fix I nearly gave up and thought I’d hit a fast food drive-thru. That reminded me of a breakfast sandwich I used to make often. So why not make one at home? I wanted something that would be fast and easy, but tasty and filling too.
The recipe is so easy. At home you can choose your favorite cheese, meat, and more. Fix it on bread, flatbread, or in a homemade roll you’ve made in your bread machine.
I went for basic in my first one. Pictured here you can see it’s egg and cheese on a kaiser roll. That’s about as fast as you can get. It was delicious. It was very satisfying, keeping me full until a late lunch. It was prepared in the microwave, which makes clean up easy as well.
Later that day, in one of those “what was she thinking?” moments, I realized I hadn’t tried it with spinach! So naturally it called for another day’s experiment. Since then I’ve played with different ingredients. That’s half the fun, after all.
As you can see, you can make them as you like. If I’m using 2 eggs, I will usually use one whole egg and one egg white, to hold down the cholesterol. I’ve used egg substitute for all or half also. It works just as well.
Often I will use only one slice of cheese on the top. Add the spinach to the egg before microwaving it If you would like the spinach cooked a bit more.
In the flat bread version, I used one slice of cheese, halved, one egg, halved, and one slice of bacon. I added avocado for a great taste!
Here is the basic recipe

- 1 roll, white, wheat, whatever you prefer
- 1 to 2 eggs (depends on size of roll)
- 1 to 2 slices of cheese
- Meat if you like, such as ham, bacon, sausage, Canadian bacon (optional)
- ¼ to ½ cup spinach
- Oil a bowl throughly (the egg will stick if not).
- Stir the one or two eggs, enough to pierce the yolks.
- Cook in microwave for 1 to 1.5 minutes.
- Place one slice of cheese on the bottom of the roll.
- Add spinach.
- If including meat, put the meat on next.
- Then top with the cooked egg.
- Season to taste.
- Place on another slice of cheese, then the top of the roll.
- Microwave the sandwich for an additional 30 to 45 seconds, long enough to melt the cheese.
Once you have the basics, it’s easy to adapt. One of my favorite cheeses to use is Provolone, but American or cheddar cheese with a slice of ham or Canadian bacon tastes great with an egg. Spinach and feta is another popular combination. And we all know bacon is always tasty for breakfast–make a modified BLT by adding tomato slices. My husband used to enjoy frying up a slice of bologna or Taylor pork to go with his sandwich. It’s surprising how good it all tastes together.
