Cauliflower Fried Rice recipe
One of my favorite new recipes using the versatile cauliflower is Fried Rice made with cauliflower. I was so pleased how well it turned out that it is now a regular in our household. I love fried rice of any type. With its variety of ingredients, I can eat it for a main course. Because of its high carb and calorie count, I wouldn’t order it often. Another reason I’m delighted with this recipe.
The first time I saw one similar was on the Skinny Taste website. It featured a lightened version of fried rice using all rice, and another for a dish made wholly with cauliflower. Since I am cautious when adding cauliflower to any dish at first, I decided to try a blend.
Half brown rice, half cauliflower rice makes a perfect combination. You still have the rice taste that makes fried rice so yummy, but the cauliflower portion lightens it up, makes it healthier, and adapts beautifully to the taste of the rice. Much as with mashed cauliflower and potatoes, you don’t taste the cauliflower, instead the cauliflower tastes like rice. If you have someone in your family who doesn’t care for it, chances are they won’t know it is there.

The version in this recipe is vegetarian, though it does include eggs. If you like pork, chicken or shrimp in your fried rice, it can be added easily. Just chop it finely and mix it in to heat.
Besides using cauliflower for half of the rice, the recipe uses one whole egg and another egg white for lower cholesterol content. The edamame tastes so good in the dish, but it can be left out and you will still love the taste.
With this recipe, I serve fried rice more often. It makes a wonderful side dish, but sometimes I will serve it as the main dish with Asian Cabbage Salad on the side. It’s so satisfying. It tastes like the original.
