Potato pancakes recipe.
Well last week was a bit of a challenge for us. We spent Tuesday in the hospital from early in the morning till about 3 in the afternoon. “Sweetling” was undergoing a procedure that required someone to be there before, during and after. So when we got home, there was nothing prepared for dinner and I was exhausted (even though I didn’t do much), I guess worrying will do that to you!
Anyway, surprisingly, the sweetling was hungry and I had to come up with something quick, nutritious, delicious. A quick scouring of the kitchen told me that the grocery shopping that should have been done, did not in fact happen. But not to worry, there are always staples in the house, so no one was going to starve.
A quick glance and I found potatoes, eggs, flour, cheese, sour cream and some clean bowls. That would do it! I got busy grating and cracking and mixing and before an hour was up, dinner was made and ready to eat!
Both Sweetling and I gorged ourselves on some quickly put together potato and cheese pancakes smothered with sour cream and salt and pepper to our liking. Delicious!

Serves: 2 - 4 portions
- 6 to 8 potatoes (depending on size)
- 3 eggs
- 1 cup of all purpose flour
- ¾ lb. of cheese (cheddar or Colby)
- salt and pepper
- sour cream for topping
- Clean and grate potatoes. I use a box grater.
- In the bowl with the grated potatoes, add flour and eggs, salt and pepper
- Mix with a large spoon until all ingredients are combined.
- Grate cheese and set aside.
- Into a hot frying pan with two teaspoons of olive oil, drop potato batter until the bottom of the pan is covered. Do not make the layer too thick.
- Cook until one side is golden brown. and turn over to cook the other side.
- Continue until all potato batter mix is used up.
- Keep these warm in the oven until ready to serve. When serving, let your family decide if they will have cheese and sour cream on top.
OPTIONS: You can add grated carrots, grated celeriac, or chopped peppers. Each time you add something different the taste will be new!
Be prepared, these are filling, but they also microwave really well. If you have left overs, they will make a great lunch the next day.
