Shrimp Cocktail Lettuce Wraps

Serves: 3 to 4
  • Butter lettuce
  • 12 cooked large shrimp
  • 2 stalks celery, diced
  • onion, chopped (optional)
  • Lemon for garnish and serving
  • Cocktail Sauce:
  • 1 cup ketchup
  • 2 tablespoons lemon juice
  • 1 to 2 tablespoons horseradish (to taste)
  1. Clean and pat dry butter lettuce, set aside.
  2. Mix cocktail sauce ingredients, adding horseradish as you like, a little at a time.
  3. Chop celery and onion into small bite sized pieces.
  4. Cut shrimp into small bites, 3 or 4 pieces per shrimp.
  5. Combine shrimp, celery, and onion.
  6. Mix in cocktail sauce gradually, until you have just enough to coat. Chill until ready to serve. Serve the remaining sauce as a dip, or save for another meal.
  7. Arrange 2 lettuce leaves on each plate. Place a small scoop of the shrimp mixture on each.
  8. Serve with lemon slices.
