Zucchini Bread

Serves: 10 portions
- 3 eggs, beaten
- 2 cups sugar
- 1 cup oil
- 2 cups shredded zucchini
- 2 tsp.vanilla
- 3 cups flour
- 1 tsp. salt
- 1 tsp soda
- 3 tsp. cinnamon
- ½ tsp baking powder
- ½ cup nuts - optional
- In medium mixing bowl beat eggs.
- And vanilla, oil, shredded zucchini and vanilla. Mix well.
- Add sugar. Mix well.
- Then in another bowl mix flour, salt, soda, cinnamon, baking powder and nuts together.
- Add to Zucchini mixture. Mix well. Pour into 2 greased loaf pans.
- Bake at 350 for 45 minutes to and 1 hour.
- Insert a toothpick in center of cake when take out of oven to make sure that it comes out clean and is done.
- Cool on a wire rack. Remove from pans.
