Ingredients
  • 1 cup vegetable oil
  • 3 eggs
  • 2 cups sugar
  • 3 cups grated zucchini
  • 2⅓ cups flour
  • ⅓ cup unsweetened cocoa
  • 1 tsp ground cinnamon
  • 1 tsp salt
  • ¼ tsp baking powder
  • ½ cup chocolate chips
  • ½ cup chopped nuts (optional)
Instructions
  1. Preheat oven to 350.
  2. Peal and shred zucchini using a shredder.
  3. Combine oil, eggs, sugar, vanilla and zucchini in a bowl.
  4. In a desperate bowl, combine flour, cocoa, baking powder, cinnamon and salt.
  5. Add dry ingredients to Zucchini mixture.
  6. Stir in nuts (optional) and chocolate chips.
  7. Pour into a greased 9 x 13 cake pan.
  8. Bake for 45 minutes or until a toothpick inserted in the center of cake comes out clean.
  9. Cool completely.
