Oatmeal Peanut Butter Cookies

Serves: 5 dozen
Ingredients
  • ¾ cup butter Crisco
  • 1 cup peanut butter
  • 1½ cup brown sugar, packed
  • ½ cup water
  • 1 egg
  • 1 teaspoon vanilla
  • 3 cups rolled oats
  • 1½ cup flour
  • ½ teaspoon baking soda
  • ¼ cup white sugar, (to sprinkle on top of cookies
Instructions
  1. Preheat oven 350 degrees.
  2. Mix together butter Crisco, peanut butter and brown sugar until creamy.
  3. Add in water, egg and vanilla. Beat until thoroughly blended.
  4. Gradually mix in dry ingredients, and blend well.
  5. Cover and chill at least 2 hours so the dough holds together well.
  6. Shape into 1 inch balls.
  7. Place on ungreased cookie sheets (I use parchment paper)
  8. Flatten very slightly with fork, then sprinkle lightly with sugar.
  9. Bake for 10 to 12 minutes or until edges are lightly browned.
  10. Cool before storing
