Oatmeal Peanut Butter Cookies

Serves: 5 dozen
- ¾ cup butter Crisco
- 1 cup peanut butter
- 1½ cup brown sugar, packed
- ½ cup water
- 1 egg
- 1 teaspoon vanilla
- 3 cups rolled oats
- 1½ cup flour
- ½ teaspoon baking soda
- ¼ cup white sugar, (to sprinkle on top of cookies
- Preheat oven 350 degrees.
- Mix together butter Crisco, peanut butter and brown sugar until creamy.
- Add in water, egg and vanilla. Beat until thoroughly blended.
- Gradually mix in dry ingredients, and blend well.
- Cover and chill at least 2 hours so the dough holds together well.
- Shape into 1 inch balls.
- Place on ungreased cookie sheets (I use parchment paper)
- Flatten very slightly with fork, then sprinkle lightly with sugar.
- Bake for 10 to 12 minutes or until edges are lightly browned.
- Cool before storing
