Cauliflower Mashed Potatoes

Serves: 4 to 6
  • 2 medium to large potatoes
  • 1 medium head of cauliflower
  • 2 - 3 tablespoons half & half
  • 2 tablespoons butter or margarine
  • salt and pepper
  • chives or green onion
  1. Peel and dice the potato, then cover with water in a saucepan.
  2. Cook about 15 minutes, until soft.
  3. Finely chop cauliflower, then steam for 4 minutes in microwave.
  4. If you prefer to cook it in one pan, you can add cauliflower to potatoes for last 5 minutes or so, until tender.
  5. Drain thoroughly, then mash the potatoes and cauliflower together, adding half and half, salt and pepper, and butter.
  6. You can use a hand mixer or a blender if you prefer a smoother texture.
  7. Put into serving dish, top with a dab or two of butter and a few chopped chives.
  8. Serve and eat!
