Spinach and Mushroom Calzones

Ingredients
  • Bread dough, fresh from bread machine (recipe below)
  • 1 teaspoon coconut oil
  • 1 clove garlic, finely chopped
  • 6 mushrooms, sliced
  • ¼ cup chopped onion
  • 3 cups fresh spinach
  • ⅓ cup mozzarella or feta cheese, diced or shredded
  • 2 tablespoons grated romano or parmesan cheese
  • Olive oil pan spray
Instructions
  1. Prepare the bread dough according to recipe below. You can use a package of Pillsbury refrigerated dough or pizza dough if you prefer.
  2. Prep veggies and cheese while the bread machine does its thing.
  3. When the dough is ready, remove from bread machine.
  4. Allow it to sit as is for 10 minutes.
  5. Preheat the oven to 375 degrees.
  6. While it sits, heat coconut oil, then saute mushrooms for 3 minutes
  7. Add garlic and onion for 2 more minutes.
  8. Add spinach, cover, and heat until the spinach is wilted. Set aside.
  9. Slice ¼ of the dough (enough for two servings).
  10. Roll out on a floured surface (I use parchment paper), until it is about 10 inches across.
  11. Cut in half.
  12. Spray lightly with pan spray (optional)
  13. Divide the mozzarella cheese onto one half of each of the rolled out crust, saving some for the top.
  14. Divide the sautéed vegetables on top of the cheese.
  15. Add the rest of the mozzarella, then sprinkle each with 1 tablespoon romano cheese.
  16. Fold over and secure edges all around.
  17. Spray the top lightly with pan spray.
  18. Place on parchment paper on a baking pan.
  19. Bake for 15 to 20 minutes or until it is nicely browned.
