Red Beans and Rice

Serves: 4
- 8 ounces uncooked long-grain rice
- 1 tablespoon olive or coconut oil
- 1 onion, finely chopped
- 2 cloves garlic, finely diced
- 1 chili, chopped
- 1 tomato, skinned and chopped
- 1 red pepper, seeded and diced
- 1 cup cooked red beans
- 2 cups water or stock
- 1 green pepper, seeded and diced
- salt and pepper
- Heat oil in a medium skillet.
- Add onion and garlic and fry until soft and translucent.
- Add the chili, tomatoes, and peppers and cook until thick and well blended.
- Season with salt, stir in the beans mixing well and add the rice and water.
- Cover and cook for 20 minutes until rice is tender and all water is well absorbed.
- Stir and serve hot.
