Red Beans and Rice

  • 8 ounces uncooked long-grain rice
  • 1 tablespoon olive or coconut oil
  • 1 onion, finely chopped
  • 2 cloves garlic, finely diced
  • 1 chili, chopped
  • 1 tomato, skinned and chopped
  • 1 red pepper, seeded and diced
  • 1 cup cooked red beans
  • 2 cups water or stock
  • 1 green pepper, seeded and diced
  • salt and pepper
  1. Heat oil in a medium skillet.
  2. Add onion and garlic and fry until soft and translucent.
  3. Add the chili, tomatoes, and peppers and cook until thick and well blended.
  4. Season with salt, stir in the beans mixing well and add the rice and water.
  5. Cover and cook for 20 minutes until rice is tender and all water is well absorbed.
  6. Stir and serve hot.
