The Healthy Brain Salad

Serves: 3 to 4
- 1 package Spinach
- 1 package Lettuce
- 2 Tomatoes, sliced or chopped
- 1 Avocado, chopped
- ½ Onion, chopped
- ½ cup Walnuts, chopped or halved
- ¼ cup Sunflower Seeds
- 1 to 1/1/2 cups Blueberries
- 1 cup Beets, canned or cooked, sliced or chopped
- ½ cup Garbanzo Beans
- Salad Dressing, recipe below
- Tear lettuce if not prepackaged.
- Slice or chop the vegetables.
- Assemble in a large salad bowl, or in individual bowls
- Toss with Cider Vinegar dressing (recipe below) or with you preference.
