Macadamia White Chocolate Dessert Bars, Made with Coconut Oil

- ½ cup coconut oil, softened but not melted (about 5 seconds in microwave)
- ½ cup granulated sugar
- ½ cup light brown sugar, packed
- 1 large egg
- 2 teaspoons vanilla extract
- 1¾ cup all-purpose flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 cup (6 ounces) white chocolate chips
- ½ chopped macadamia nuts
- 2 to 3 tablespoons water, as needed
- Preheat oven to 350 degrees.
- Oil or spray a 9x9 pan.
- In a large bowl blend together coconut oil, egg, vanilla, brown sugar and regular sugar.
- Mix on medium to high speed 4 to 5 minutes until light and fluffy.
- Add flour, salt, and baking soda, then mix for 1 minute, until just blended.
- Stir in white chocolate and macadamia nuts.
- If dough is still too dry, add a tablespoon of water at a time.
- Press into oiled 9x9 baking pan.
- Bake 15 minutes, then check every few minutes after that until edges are lightly browned.
