Macadamia White Chocolate Dessert Bars, Made with Coconut Oil

Ingredients
  • ½ cup coconut oil, softened but not melted (about 5 seconds in microwave)
  • ½ cup granulated sugar
  • ½ cup light brown sugar, packed
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1¾ cup all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup (6 ounces) white chocolate chips
  • ½ chopped macadamia nuts
  • 2 to 3 tablespoons water, as needed
Instructions
  1. Preheat oven to 350 degrees.
  2. Oil or spray a 9x9 pan.
  3. In a large bowl blend together coconut oil, egg, vanilla, brown sugar and regular sugar.
  4. Mix on medium to high speed 4 to 5 minutes until light and fluffy.
  5. Add flour, salt, and baking soda, then mix for 1 minute, until just blended.
  6. Stir in white chocolate and macadamia nuts.
  7. If dough is still too dry, add a tablespoon of water at a time.
  8. Press into oiled 9x9 baking pan.
  9. Bake 15 minutes, then check every few minutes after that until edges are lightly browned.
