Best Baking Powder Biscuits

Serves: 12 biscuits
- 2 cups flour
- 4 teaspoons baking powder
- 2 teaspoon sugar
- ½ teaspoon salt
- ½ teaspoon cream of tartar
- ½ cup butter or shortening (I used half of each)
- ⅔ cup milk (I used 1%)
- Preheat oven to 350 degrees.
- Line cookie sheet with parchment.
- Sift together dry ingredients.
- Cut in ½ cup shortening or butter with a pastry cutter until mixture resembles coarse crumbs.
- (If using a Ninja combine, then pulse for 10 to 15 seconds).
- Add milk all at once.
- Stir until dough follows fork around the bowl. Dough should be soft and easy to handle.
- Turn dough onto lightly floured surface (parchment works great for this).
- To knead, fold dough and press down gently with heel of hand 8 to 10 times.
- This will blend ingredients and assure fine texture and plump biscuits.
- Flatten with hand or rolling pin to ¼ to ½ inch thickness.
- Cut out and place on cookie sheet.
- Cook for 10 to 12 minutes. The biscuits should be lightly brown on the bottom. Don't overcook.
- If you want to make drop biscuits, increase milk to 1 cup, then drop onto cookie sheet and bake.
