Bacon Pea Soup

Serves: 4
- 6 bacon slices, cut into small pieces
- 2 tablespoons butter
- 1 large onion, diced
- 2 celery sticks, chopped
- 1 carrot, chopped
- 2 cans of chicken broth
- 2 to 3 cups water
- 1 cup of frozen peas
- 1 cup small pasta noodles like stellini
- Chop the bacon into small pieces.
- Cook the bacon til it begins to brown.
- Drain all but 1 tablespoon of oil
- Cook the bacon, onion, carrot and celery on low for about 3 minutes.
- Add the broth and 2 cups of water, let simmer for 5 minutes.
- Then add the peas and pasta until the pasta is done.
- Add more water to the desired consistency.
- Pepper and salt to taste.
- Serve with rolls, biscuits or cornbread15.
