Spinach Sandwich
- 1 teaspoon olive oil
- 1 clove garlic, finely chopped
- 1 bag (10 ounces) spinach
- ½ red onion, sliced
- 4 rolls
- 8 slices of Provolone cheese
- Slice rolls in half, placing a slice of cheese on the bottom and one on the top of the roll.
- Saute garlic in olive oil for 3 minutes.
- Add Spinach, stirring occasionally, until it is all wilted.
- Remove spinach to a plate or bowl lined with paper towels to absorb some of the moisture.
- Divide onto the 4 rolls.
- Heat in microwave or in a 350 degree oven long enough to melt the cheese.
- Serve immediately
