Puerto Rican Bananas

Serves: 4
- 1½ cups sugar
- ½ cup water
- ½ cup heavy cream at room temperature
- ¼ cup dark rum
- 4 bananas
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- Preheat oven to 350 degrees.
- Combine the water and the sugar in a saucepan and place over a medium heat whisking constantly
- The sugar will dissolve and the mixture will begin to turn golden brown
- As soon as it becomes golden, remove it from the heat
- Slowly add the cream in small amounts
- Stir in the rum
- Meanwhile put the bananas,still in their skins, on a baking sheet and bake until they split open(about 20 minutes)
- Remove from the oven
- Serve in the skins with a pool of the hot rum sauce. Sprinkle with nutmeg and cinnamon if desired
