Get Together Breakfast

- 2 tablespoons butter
- 4 cups sliced peeled apples
- 1½ cups raisins
- ¼ cup light brown sugar
- ½ to 1 teaspoon cinnamon
- 4 eggs
- 1 cup milk
- 1 cup flour
- 1 tablespoon granulated sugar
- 1 tablespoon grated lemon on orange peel
- Pinch salt
- Lemon wedges
- Maple syrup
- Preheat oven to 425 degrees.
- Melt the butter in a large ovenproof skillet over a medium heat.
- Add apples,raisins, brown sugar and cinnamon.
- Cook covered, stirring from time to time until the apples are tender - about ten minutes.
- Remove the mixture from the pan an set aside
- Wipe the skillet clean and grease.
- In a blender blend the eggs and milk on high speed Add the flour,granulated sugar, peel and salt.
- Blend until smooth and pour into the skillet.
- Spoon the apple/raisin mixture evenly over the top.
- Bake for about twenty minutes until puffy and golden brown.
- Serve warm with the lemon wedges and the maple syrup
