Dutch Baby Pancake

Serves: 3-4
- * 2 tablespoons unsalted butter
- * 3 large eggs
- * ¾ cup milk
- * ½ cup flour
- * ¼ teaspoon salt
- * ½ teaspoon pure vanilla extract
- * ¼ cup sugar
- Preheat oven to 425 degrees.
- Melt 2 TBS butter in a medium cast iron skillet then remove from heat.
- In a blender mix eggs, milk, flour, salt, vanilla, and the sugar until smooth and foamy, about one minute .
- Pour batter into skillet.
- Bake until pancake is puffed and light brown, about 20 minutes.
- Sprinkle with powdered sugar.
- Serve immediately. Pancake may fall quickly.
