Chilled Peaches in Wine
 
 
This recipe depends entirely on the quality of the fruit - get the best you can.

Serves: 4 portions
Ingredients
  • 4 medium peaches (about 1½ lbs)
  • 2 tablespoons sugar
  • 2 cups crisp white or rose wine
Instructions
  1. Thinly slice the peaches.
  2. In a bowl combine them with the sugar and toss gently to mix.
  3. Add the wine and toss gently again.
  4. Taste and add more sugar if you wish.
  5. Refrigerate for several hours before serving cold.
