Fast, easy, satisfying and delicious, these tasty quesadillas will delight your entire family. The spinach gives them a nice nutritional boost, and an extra flavor that is wonderful. Add your own favorites too.

Ingredients
  • 4 tortillas
  • 3 cups spinach, roughly chopped
  • ⅔ cup reduced fat grated cheese
  • 2 green onions, chopped
  • Olive oil, spray preferably
  • Salsa
Instructions
  1. Preheat oven to 350 degrees or preheat griddler to high.
  2. Assemble and prep ingredients.
  3. Spray or brush olive oil on one side of each tortilla.
  4. If baking, place one tortilla oiled side down on a cookie sheet lined with parchment paper.
  5. Sprinkle a portion of the cheese evenly on the tortilla.
  6. Stack spinach onto that.
  7. Sprinkle with green onion.
  8. Top with the remaining cheese.
  9. Add the second tortilla, oiled side out.
  10. Bake until lightly browned and cheese is melting, about 15 minute.
  11. If using a griddler, arrange toppings on bottom tortilla then carefully lift onto hot griddler pan.
  12. Top with second tortilla and close lid.
  13. Cook on griddler about 10 minutes, or until browning.
  14. Remove from griddler or oven when done.
  15. Slice into 6 pieces and serve immediately.
  16. Serve with salsa.
