Roast Cauliflower with Lime

Serves: 2 to 4
  • 3 cups cauliflower pieces
  • 2 tablespoons olive or grapeseed oil
  • 1 clove garlic, finely diced
  • 2 tablespoons cilantro, plus a little more for serving
  • 1 green onion, finely chopped
  • 2 limes, quartered
  1. Combine all ingredients except the limes in a zip seal bag.
  2. Set aside 1 lime until after roasting.
  3. Squeeze the juice from the rest into the bag, as thoroughly as possible.
  4. Toss the lime quarters into the bag then as well and seal.
  5. Shake up so the cauliflower is evenly coated.
  6. If time, place the bag in the fridge for a couple of hours, pulling out to mix several times.
  7. Preheat oven to 450 degrees.
  8. Spread cauliflower on a baking sheet lined with parchment paper.
  9. Roast 30 minutes or until lightly browned.
  10. Before serving, toss with the juice of the remaining lime and a bit more fresh cilantro.
