Asparagus and new potatoes in butter lemon sauce with fresh herbs
Serves: 2 portions
  • 8 oz fresh asparagus,cleaned, trimmed and cut into 1" pieces
  • 8 new potatoes, cleaned and cut into bite size chunks
  • 1 small red pepper, seeds removed, sliced
  • ½ lemon
  • 1 - 2 oz blue cheese
  • 1 oz (approx) butter
  • Fresh herbs to garnish
  1. Boil a pan of water and add the potatoes. Turn the heat down and cook for about ten minutes.
  2. Add the pepper slices to the pan and cook for about one minute.
  3. Drain out the water,leaving ½ in the pan. Turn down the heat and return the pan to the stove.
  4. Add the asparagus and place a lid on the pan.
  5. Melt the butter in a small pan and add the juice of the ½ lemon.
  6. Drain the vegetables and add the butter/lemon.mixture
  7. Add the cheese broken into small pieces.
  8. Shake the pan until the vegetables are coated.
  9. Add chopped fresh herbs.
