Pear and blue cheese pizza

- 1 pack pizza dough
- 1 leek, cleaned, trimmed and sliced
- 1 pear, peeled and cored
- 2 oz hard cheese, grated
- 1½ oz blue cheese, crumbled
- 1½ oz goat cheese, crumbled
- Salad leaves
- Olive oil
- Preheat the oven to 400 degrees.
- Heat the oil in a pan and saute the leek slices on a low-medium heat for five minutes.
- Cut half the pear into cubes and the other half into slices. Add the cubes to the leeks and cook for a further two minutes.
- Turn the heat to low and cover the pan.
- Prepare the pizza dough on a cookie sheet and bake for 5 - 8 minutes. It should not be fully cooked.
- Remove the base from the oven and sprinkle with the hard, grated cheese.
- Add the leek/pear mixture, spreading it evenly over the base.
- Add the remaining cheeses.
- Bake for a further 5 - 8 minutes.
- Remove from the oven and immediately add the pear slices.
- Allow the pizza to cool slightly, add the salad leaves on top of the pear slices and serve at once.
