Indian Cumin Cauliflower Rice with Spinach

Serves: 2 to 4 servings
- 2 tablespoon virgin, organic, cold pressed coconut oil
- 1 shallot or 2 green onions
- 1 teaspoon cumin
- 1 teaspoon tumeric
- 1 tablespoon ginger (optional)
- 4 cups riced cauliflower (about 1 head)
- 4 cups fresh spinach
- 1 14.5 ounce can garbanzo beans (chick peas), drained and rinsed
- Sea salt to taste
- Pepper to taste
- Lemon slices for garnish (optional)
- Heat coconut oil in a large skillet.
- Add the onion and ginger if you are using, and cook on medium for 2 minutes.
- Add the riced cauliflower and saute 2 minutes.
- Add the cumin, turmeric, garbanzo beans, and spinach.
- Stir often, cooking until spinach is wilted, between 2 and 3 minutes.
- Serve hot, with salt, pepper, and lemons slices.
