Fantastic Fruit Filled Green Salad
Even in the midst of the winter chill I still often crave a crisp, cold salad. Fresh fruit all year long is a must. Between the soups and the hot comfort food, sometimes a super healthy combination of vegetables sounds so good. This time I decided to combine the two for a delicious, sweet taste.
Many of us have had salads with strawberries tossed with spinach, or Mandarin oranges found in an Asian salad. In my recipe for the Nearly Perfect Salad for a Healthier Brain, I added super nutritious blueberries to the salad.
One day I found I had a variety of fruits on hand, so I decided to toss it all together. Pure yumminess! The sweetness of all the fruit, with the crisp spinach and lettuce tasted so good. All the flavors went beautifully together. I used grapefruit, orange, strawberries, raspberries, and blueberries, with some diced red onion and a few chopped walnuts for crunch.
A Simple Dressing
The final touch was the dressing. All I used was fresh squeezed juice from half of the orange. I loved it! It made a perfect and easy sweet topping for a salad. The whole dish is light, colorful, refreshing and satisfying. If you like you could add lemon or lime to the juice too, or any citrus blend you like. I enjoyed skipping the oil and the vinegar for a lighter, sweeter flavor. The onion provided some bite to the flavor. What an easy way to fit in three to five of the recommended servings of fruits and vegetables, all on one plate.
Add your favorite cheese too if you want. Feta or blue cheese crumbles are very popular with fruit.

What a scrumptious looking salad. I’ve never cared for oily dressings, and I have family members who won’t touch them, so we often use a splash of fresh-squeezed citrus. Thank you for a beautiful salad suggestion.
