Healthy pastry recipe using olive oil
For the last twenty years or so, the average consumer has demanded healthier, ‘guilty-free’ menu items. We were delighted to find this pastry recipe.
What’s more, it’s quick and easy. This recipe creates enough pastry for a ten inch quiche.
Here’s how to make the pastry
Stir together one and a quarter cups of flour and half a teaspoon of salt. I use a mixture of all-purpose flour and 100% wholewheat flour. Experiment.
Add one third of a cup of virgin olive oil. Drizzle it slowly, as you mix. This can be done by hand but is far quicker in a stand mixer. When it’s mixed, you should have pea-sized crumbs.
Add about two tablespoons of iced water until the dough comes together. (You may need more). Knead briefly until the pastry forms a ball.
This pastry won’t roll; you need to press it into a quiche plate. It seems awkward at first but easier the next time! Fill at once or you can leave it at room temperature for several hours.
For a simple quiche, add grated cheese, sauteed onions and beaten eggs. But the possibilities are endless.
This pastry has no animal fat, it’s delicious and is suitable for vegans. A perfect addition to any menu.
