Two favorite salads: Seven Layer & Italian Pasta
Two of my favorite veggie salads to make is a Seven Layer Salad and a Zesty Italian Pasta Salad. Both of these salads can be made the night before then chilled for serving the next day. With each salad you can substitute veggies in or out of what you like or don’t like.
Here’s how I make them:
Let’s get it layered!
You start with lettuce in the bottom then you layer celery, green pepper, red pepper, onion, frozen peas and hard boiled eggs. You then add mayonnaise-sour cream topping on top of all the layer. Lastly you sprinkle bacon bits on top. Chill it overnight.
Zesty Italian Salad
Throw in a bowl and mix together
This salad has many good healthy veggies in it along with colorful pasta noodles. There are tomatoes, red onion, green, yellow and red peppers, black olives, cucumber and broccoli. All tossed together with zesty Italian dressing. So good!

Both of these look delish. I’m partial to antipasto salads, though. Have a very successful new year.

I like the sound of both the salads. Perfect for those summer lunches!
